Memorandum - Mr Villion
a Genoese merchant, about 30 years
ago used to mention a
mode they had to his
knowledge in Italy of
preserving pea fruits,
and particularly peaches
in wax bees wax. For this purpose
it should seem
not to be necessary to
fill up with wax the
vessel in which they
are kept; but sufficient
to coat them over
so it be perfectly, for
example by dripping
into the wax when melted.
The only way in
which the operation
could contribute to the
effect must be the
exclusion of the preservandum
from the air:

or the nitrogen,
or both?

include fish in the system

which preservation of fish
by cold seems to hold
out a promise of profit,
is - that of a glut
whereby a quantity may
be purchased at a price
much below the ordinary
price: below even the price
of butchers' meat.

it at the outset may otherwise then
in the way of experiment

up in barrels, before it
spoilt all the fish that
might be to be had at

On this consideration
a possibility advantageous appendage
to the Frigidarium might
be a receptacle in which
the fish being spread out
on stages, steam might
be applied to the whole
quantity together for
the purpose of giving them
that degree of temporary preservation
which is given by dressing:
i.e. bringing
them to a boiling heat.
But if the laboratory of
the frigidarium were
the floor under a dome
inclosed in ice, any
quantity of fish might
it is supposed be kept
in such a place without
spoiling which the
workmen were employed
in packing it.
