If it should so happen that from the employment which the Empress may
find for me or from any other cause whatever, I should not be able to, turn
that is, I should not have an opportunity of turning, to account of
private profit my improvements relating to mines or even those
relating to Saltworks; the making of Corn Spirits is the next
object of Economy which presents itself as a great source of profit:
and this is what may be and is carried on in every part of the Empire.
How the making the malt is conducted in this country is what I have not
yet happened to attend to, but I suppose it is no nearer being
brought to the point of perfection than other operations depending
on chemical knowledge. The fermentation of the infusion is not
understood at all. I believe I have already told you that where
I have seen works of this kind they have not known if a
given measure of corn would produce 3 or 5 measures of spirit
when it produces 5 there is all the reason to believe the operation
was not as perfect as it might with advantage be made.
I cant help thinking I shall one day or other have estates of
my own in this country, and therefore brandy fabricks of course.
And how am I to come at estates here? say you:- why by marrying
somebody who has them: for if I am settled here according to my
hopes I certainly shall one day or other marry a native of the
country and most certainly I shall not marry one who has
no estates. Though At this time I should be fool enough for you
would call me to disregard the forfeiting the pretensions
to the Countess, inheritance, should that be the consequence of a
stolen match. Everybody assures me however that what is to come
