Memorandum - Mr Villion
a Genoese merchant, about 30 years
ago used to mention a
mode they had to his
knowledge in Italy of
preserving pea fruits,
and particularly peaches
in wax bees wax. For this purpose
it should seem
not to be necessary to
fill up with wax the
vessel in which they
are kept; but sufficient
to coat them over
so it be perfectly, for
example by dripping
into the wax when melted.
The only way in
which the operation
could contribute to the
effect must be the
exclusion of the preservandum
from the air:
Quere from the oxygene,
or the nitrogen,
or both?

If should not
suffice to keep fruit
from mouldiness, the
larger sorts, such as
peaches, nectarines and
large plums, might be
coated with bees wax.
the small ones such as
currants, mulberries
strawberries &c withkept in
water; putting some
ingredient into the water
suppose an acid lemon
juice and sugar.- to
preserve them from insipidity.

Upon looking over the
printed list of Fish
in season it seems pretty
clear that in the first instance
at least, it would
not be worth while to
include fish in the system
of experiments, in
any other view than the
merely preserving them
in an eatable state.
Reasons. 32
1. Though their flavour should
remain unimpaired
this can scarcely be
expected with regard to
their firmness: a property
which seems to depend on
life.. Fish lose in value
by losing firmness:
meat gains in value
by becoming tender;
i.e. by losing firmness.

2. Fish when out of
season - i.e. when
brought to market at
a time of the year at
which it is not customary
to bring it to market
is in general considered
as not being equally
good - and is sold (it is supposed rather at an under than at price.

The only case in
which preservation of fish
by cold seems to hold
out a promise of profit,
is - that of a glut
whereby a quantity may
be purchased at a price
much below the ordinary
price: below even the price
of butchers' meat.

But the profit being
in this case not usual, it
would be wasting time
and money to engage in
it: at the outset may otherwise then
in the way of experiment
at the as above.

In case of a glut
there might perhaps
be scarcely time to pack
up in barrels, before it
spoilt all the fish that
might be to be had at
once.

On this consideration
a possibility advantageous appendage
to the Frigidarium might
be a receptacle in which
the fish being spread out
on stages, steam might
be applied to the whole
quantity together for
the purpose of giving them
that degree of temporary preservation
which is given by dressing:
i.e. bringing
them to a boiling heat.
But if the laboratory of
the frigidarium were
the floor under a dome
inclosed in ice, any
quantity of fish might
it is supposed be kept
in such a place without
spoiling which the
workmen were employed
in packing it.

Conclusions from No 31
& c.
1. In case of want
of room fish may be
left out altogether
2. If admitted, none
but the cheapest sort,
viz. sprats need be employed.

1. Fish in aeri, as a
standard.

water, but after having
been brought to a boiling
heat, and then cooled
to the temperature of the
kitchen.

Distinction marks for a
Vessels.
1. In balneo, numbers
(figures) stamped in black
upon these steps of white
wood, or painted white,
with figures in black paint.
2. They should be mounted
on a stiff wire
stuck through them:
not connected with the
vessels by packthread
Reasons
1. If with packthread, the
vessels being so numerous
and close to each other
would entangle with one
another, as the labels floated
in the water: and
in disentangling them
much time might be spent.
2. The packthread might
perhaps in the course of
the year be so far rotten
as to break.
