Hampstead 2 July 1809

The corks should be dipped in Wax
moistened with suit — The thermometers
should be graduated by setting them
with accurate ones in a Water Bath
& marking every five degrees on paper
soaked in oil — The Birds that are
embowelled should be stuffed with
a clean cloth — Instead of chopped
Cabbage should prefer Mustard Cress
Corn Sallad & a month hence Brocoli
Sparrows & other Small Birds may
be had cheap at the Royal Exchange
or Covent Garden during the Frost.
Calve's hearts will be difficult to keep
on acct of the Blood they contain
Mutton is easier to keep than either
Beef or Veal. Meat or Fruit must
not be bruised - Crimped Cod
may easily be preserved by cutting
the Jugular vein & slicing it while
warm then throwing it in cold
Water
