"1s/8d Day whilst there we will do as many as you can fget
The meaning of the word doing them is selling them and cheating
of People in that manner — but in regard of being only imprisoned
they do not mind a Straw for whilst there they are
always supported by the Peson ofr Persons who employs them —
So that the only thing is to make an Act for such Practices Public
Whipping in some Public Market or Fair, or a Penalty
Levied upon any such Person offering such for Sale

Whereas it has become a general Practice of Butchers buying
Cattle of all sorts after they are dead and Dressing them for sale as
Butchers Meat both in Town and Country that the clearest Eye
cannot discern the difference after their washing and wiping it
with warm Water and Towels which they Generally do in Cow
houses or Barns &c where such Cattle should happen to die
I Richard Minton can give very plain proffs of it to be true —
Some time ago a Cow died after Calving it was some time before
they could make their market of it to their minds they sent
to one King in St George's Market in Offord Road who came
and bought it drest it in the Cow House for Sale as wholesome
meat in the Market.

Several other proofs worse than what I have mentioned
I can prove has been done and if a proper Remedy is not taken
to put a Stop to such Villainy one half of His Majesty's Subjects
will certainly be poisoned in course of time.

Numbers of Butchers who do not kill their own Meat
goes to different Markets and buys at the cheapest rate such
quantities as are convenient for them, Ready kill'd of what is
call'd country Beef! through most frequently such is nothing
but such casualty Meat that has died through disease &c.

This being generally very Lean Meat great quantities
of it are sent to Gentlemens Houses &c for Stewing for Gravies
Soups &c so that the Rich and Poor are alike affected by
the imposition and infection.
